Pork Roll Sandwich with Egg & Cheese via Cooking Channel TV

Ingredients:
  • 4 Slices pork roll (about 6 oz)
  • 2 tablespoons unsalted butter
  • 4 kaiser rolls, split in half and toasted
  • 4 large eggs
  • Kosher salt & freshly ground black pepper
  • 4 slices American cheese
  • Ketchup (optional)

DIRECTIONS

Score the edges of the pork roll slices in 3 or 4 places. This will keep the slices flat and prevent them from buckling as they cook.

Heat the butter in a large nonstick skillet over medium-high heat. Add the pork slices in one layer and brown well on both sides, about 6 minutes. Remove the slices and place one on top of each toasted roll bottom.

Reduce the heat to medium-low and crack the eggs into the skillet. Break each yolk with the corner of your spatula. Sprinkle with salt and pepper. After about 2 minutes, flip the eggs and continue cooking on the other side. Immediately place a slice of American cheese on top of each egg. Cover with a lid to melt the cheese, about 30 seconds.

Place each egg and cheese quadrant on top of a browned pork roll slice. At this point you can squeeze ketchup on top if desired. Top with the other half of the roll.

Best Beef Burger (via Martha Stewart)

 

Ingredients

  • 2 pounds ground chuck
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Coarse salt and pepper
  • 4 hamburger buns

Directions

  1. Heat grill to high. In a medium bowl, use a fork to gently combine beef, mustard, and Worcestershire sauce; season with salt and pepper. Gently form mixture into four 1-inch-thick patties.
  2. Place patties on hottest part of grill; sear until browned, 1 to 2 minutes per side. Move patties to cooler part of grill; continue grilling until desired doneness, 4 to 8 minutes per side.
  3. Split the hamburger buns and toast on the grill if you like; place a burger on each bun and serve with the desired accompaniments.

Variations

Suggested accompaniments: cheese slices, sliced beefsteak tomatoes, red and white onions (raw or grilled), ketchup, mustard, pickles, mayonnaise, Boston lettuce leaves

Garlic Herb K.C. Strip Roast

Roast New York Strip Loin with Garlic-Herb Crust

Serves: 4 to 6, depending on roast size.

Ingredients
  • 1 Kansas City strip roast
  • 2 heads roasted garlic
  • 3 1/2 teaspoons salt
  • 1 1/2 teaspoons freshly ground black pepper
  • 1 tablespoon finely chopped fresh rosemary leaves
  • 1 tablespoon finely chopped fresh thyme leaves
  • 1 1/2 cups red wine 
  • 1/2 cup beef stock
Instructions:
  1. Preheat oven to 325 degrees.
  2. Separate the heads of roasted garlic into cloves and squeeze the roasted garlic out of the peels.
  3. Place the garlic in a small bowl and mash with the back of a fork until mostly smooth.
  4. Add 1 teaspoon salt, 1/2 teaspoon pepper, the rosemary and theyme, and stir to blend.
  5. Pat this mixture evenly over the top and sides of the roast.
  6. Place the roast in a roasting pan and add 1 1/2 cups red wine and 1/2 cup beef stock to the bottom of the pan.
  7. Cook to desired doneness, removing roast at 135 degrees for medium rare; 150 degrees for medium.
  8. Tent loosely with aluminum foil and let stand for 15 minutes.
